Marinated Eggs (Ajitsuke Tamago)

This is a recipe for Ajitsuke Tamago (marinated eggs). Here are the steps again in detail:

Ingredients:

  • 6 eggs
  • 200ml Japanese soy sauce
  • 100ml mirin (rice wine)
  • 200ml water
  • 2 tbsp coarsely chopped ginger

Preparation:

  1. Poke eggs and place in boiling water. Reduce the temperature slightly and let it cook for 6 minutes.

  2. Rinse the eggs under cold water until they have cooled, then they can be peeled.

  3. Bring the soy sauce, mirin, water and ginger to the boil in a pot and simmer for 5 minutes. Allow to cool slightly.

  4. Pour the soy sauce mixture into a screw-top jar or preserving jar and add the peeled eggs.

  5. Close the jar and let the eggs marinate in the refrigerator for 10-24 hours.

  6. Use the marinated eggs as a topping for ramen or other dishes.
