This is a recipe for Ajitsuke Tamago (marinated eggs). Here are the steps again in detail:
Ingredients:
- 6 eggs
- 200ml Japanese soy sauce
- 100ml mirin (rice wine)
- 200ml water
- 2 tbsp coarsely chopped ginger
Preparation:
-
Poke eggs and place in boiling water. Reduce the temperature slightly and let it cook for 6 minutes.
-
Rinse the eggs under cold water until they have cooled, then they can be peeled.
-
Bring the soy sauce, mirin, water and ginger to the boil in a pot and simmer for 5 minutes. Allow to cool slightly.
-
Pour the soy sauce mixture into a screw-top jar or preserving jar and add the peeled eggs.
-
Close the jar and let the eggs marinate in the refrigerator for 10-24 hours.
-
Use the marinated eggs as a topping for ramen or other dishes.
Bon appetit!
