Ingredients for 1 serving:
- 1 portion of TADA Ramen noodles from the starter set
- 1 dash of sesame oil
- 1 teaspoon Spice Up spice mix
- 1 soft-boiled egg
- 4 leaves of bok choy, lightly grilled or fried
- A few sprigs of coriander
- 1 teaspoon toasted sesame seeds
- 1 slice of hand-fired Chashu
For the Chashu (preparation the day before):
- 200 g pork belly
- 2 tablespoons of soy sauce
- 1 tablespoon mirin
- 1 tablespoon of sugar
- 1 garlic clove, minced
- 1 slice of ginger
Preparation:
1. Prepare the chashu (the day before): Roll up the pork belly lengthwise and tie it tightly with kitchen twine. In a pot, combine soy sauce, mirin, sugar, garlic and ginger. Place the pork belly in it and let it marinate overnight.
2.Cook Chashu: Place the marinated pork belly in water and bring to a slow boil
Reduce heat and simmer for 1.5 to 2 hours, until meat is tender. Then let it cool and cut into thin slices.
Cook egg: Add an egg to boiling water and cook until softened, 6-7 minutes. Drain immediately in cold water, peel and halve.
Prepare ramen: Cook the TADA ramen noodles according to the package instructions. Drain and set aside.
Heat the sesame oil in a pot and add the Spice Up spice mixture. Fry briefly until fragrant.
Add the noodles to the spice mixture and mix well so that they absorb the aromatic taste.
Place the noodles in a bowl and top with the chashu slice, soft-boiled egg, grilled bok choy leaves, cilantro, toasted sesame seeds and chashu.
Fill the ramen with hot tonkotsu broth from the starter set and enjoy.
